Vegetable cutlet is a tasty and healthy snack. it is good finger food for kids, the perfect choice for parties and a good treat for guests. You can use varieties of vegetables like green beans, cauliflower, broccoli, peas, carrots along with mashed potatoes. I have shallow fried the cutlets you can also deep fry or bake the cutlets it’ll also be so yummy.

Ingredients
  • 3 Carrots
  • 2 Potatoes
  • 1/2 cup Peas
  • 1/4 cup Onions/ Shallots (chopped)
  • 1 Green chili (optional)
  • Few Coriander leaves
  • Salt as needed
  • 1/2 tsp Chili powder
  • 1/2 tsp Chat masala
  • Ginger a small piece
  • 4 tsp Maida
  • 1 cup Bread crumbs
  • Oil for shallow frying
Instructions
  1. Steam cook or pressure cook the vegetables (potatoes, carrots, and peas for 8 to 10 minutes).
  2. Once done drain the water and keep it in a bowl.
  3. Then add chopped onion, green chili, ginger, and coriander leaves.

  4. Add salt, chili powder, and chat masala.

  5. Combine everything well and mash vegetables completely.
  6. Make a cutlet mix into small patties.
  7. Meanwhile, in a bowl add maida and water make it as medium thick consistency paste and keep it aside.

  8. In a bowl add the breadcrumbs and keep it aside.
  9. Dip the patties in the maida mix and coat on both sides.
  10. Add it in the bread crumbs and make sure patties coated well.
  11. Repeat the same for all the patties.

  12. Heat oil in a pan, gently add the patties, cook till golden and crisp.
