Falooda is a tasty Indian dessert served chill along with ice cream, Falooda is commonly made with rose syrup and other ingredients like milk, sabja seeds (also known as tukmaria or basil seeds), vermicelli, jelly with any flavor, tutti frutti, chopped nuts. Apart from rose Falooda, there are lots of other flavors for Falooda like badam falooda, mango Falooda, pineapple falooda, mixed fruit falooda, etc., if you want to make falooda with different flavors, you can replace the rose syrup with that particular fruit essence.
I have used rooh afza for making falooda, which will give the original taste for falooda if the rooh afza is not available you can use rose syrup (rose essence mixed with sugar syrup) or you can use rose essence. If you are using rose essence add 2-3 drops of rose essence with 2 cups of milk (boiled and cooled completely). I have used falooda sev which is easily available in grocery stores, and also available in different colors and flavors, and mixed colors too. If you can find one, you can use regular roasted vermicelli and follow the same cooking instructions.
You can adjust the sugar according to your taste while adding it with the milk, you can add 2 or 3 scoops of vanilla ice cream with 1/2 liter of milk and use, it is easy and quick. You can also add chopped nuts and chopped fruits on top of falooda. Sabja seed is a really healthy and tasty ingredient of falooda if it is not available you can use chia seeds. You can also replace the tutti frutti with chopped nuts if it is possible you can add some chopped mixed fruits too.
Generally, strawberry jelly is used in falooda, to make it more interesting I have added strawberry jelly and lemon jelly, you can use 1 or 2 flavors of your choice. While adding ice cream you can add any of your favorite ice cream like vanilla, strawberry, mint, chocolate, etc. I used vanilla ice cream.
Other varieties – badam kheer, strawberry smoothie, apple milkshake, watermelon popsicle, paal kozhukattai, rava paniyaram, millet payasam, milk peda, paruppu payasam, watermelon popsicles, apple milkshake, sakkarai pongal, Asoka halwa, pidi kozhukattai, moongdal laddu, thirunelveli halwa, mango milkshake, strawberry smoothie, badam halwa, carrot halwa, mango kesari.
Healthy and tasty dessert
- 2 cups Milk (500 ml)
- 1/4 cup Sugar
- 2 tsp Sabja seeds
- 1 cup Water
- 1 pack Strawberry flavored gelatin powder (85 grams)
- 1 pack Lemon flavored gelatin powder (85 grams)
- 2 cups Boiling water
- 2 cups Water
- 1 pack Falooda sev (50 grams)
- Required water
- 1/4 cup Rooh Afza or Rose syrup
- 2 tsp Tutti frutti
- 2 scoops Vanilla Icecream

Boil 2 cups of milk on medium flame.

Add 1/4 cup of sugar and mix well.

Cool completely and refrigerate.

In a bowl add 2 tsp of sabja seeds.

Add 1 cup of water and soak for 15 minutes.

Take 2 different vessels and add 1 pack of strawberry flavor gelatin and 1 pack of lemon flavor gelatin.

Add 1 cup of boiling water in each.

Stir for 2-3 minutes.

Add 1 cup of water in each.
-
Refrigerate for 4 hours, once done cut into small pieces.

In a pan boil required water for falooda sev.

Add 1 pack of sev.

Cook for 2-3 minutes.

Drain and rinse with cold water.

In a serving cup, add 3 tsp rooh afza.

Add 3 tsp soaked sabja seeds.

Add 2 tsp of cooked sev.

Add 3 tsp lemon jelly and 3 tsp strawberry jelly.

Add 1 cup of prepared milk, and mix gently.

Add 1 scoop of vanilla icecream.

Add 1 more tsp of roof afza.

Finally, sprinkle 1 tsp of tutti frutti.

Serve chilled.
