Kudo Millet Idli / Sirudanya Idli

Millet is a healthy grain, we can make verities of dishes with millets like Idli, Dosa, Paniyaram, Curd rice, Adai, Pongal, Sirudhanya Biriyani.

Kudo millet is one of the healthiest millets, apart from kudo you can make Idli by using any kind of millet with this recipe. Kudo millets idli will be softer and tastier than regular idlis, and dosa will also be crunchy and tasty.

Ingredients
  • 2 cups Kudo Millet
  • 1 cup Idli Rice
  • 3/4 cup Urad dal
  • 1/2 cup Poha
  • Salt as needed
  • Oil for greasing
Instructions
  1. Wash Kudo millet, Idli rice, and poha. Soak everything together for at least 4 hours.
  2. Wash and soak urad dal.
  3. Grind rice, millet, poha together and grind urad dal separately. (In a wet grinder or mixer)

  4. Grind everything as a smooth paste.
  5. Mix urad dal batter with millet batter and mix well. 
  6. Add salt and combine well.
  7. Now ferment the batter for 6-8 hours.
  8. After fermentation mix the batter well.
  9. Grease idli mold, pour batter and cook for at least 8-10 minutes.
  10. For dosa, heat tawa grease and pour batter, make a thin dosa and cook it on medium-high flame.
  11. Flip it over and cook for 2-3 minutes.

  12. Soft millet idli and crispy dosa are ready to serve.

Method

5. Now ferment the batter for 6-8 hours. After fermentation mix the batter well.

6. Grease idli mold, pour batter and cook for at least 8-10 minutes.

7. For dosa, heat tawa grease and pour batter, make a thin dosa and cook it on medium-high flame.

8. Flip it over and cook for 2-3 minutes.

9. Soft millet idli and crispy dosa are ready to serve.
