Masala Pasta is a yummy pasta made with vegetables along with Indian spices, it is a healthy and delicious dish, one of the kid’s favourite dishes. 

You can prepare the same dish with any kind of pasta like Macaroni, Penne, Elbows, Fusilli, Shell, even it is suitable for spaghetti and Ravioli.

I made it with elbow pasta. You can also use whole grain pasta, it is healthier than the regular one.

Notes

  • Cook pasta according to the instructions do not overcook.
  • To make cheese pasta add the grated mozzarella cheese while turning off the flame.
  • Adding chilli sauce will enhance the taste.
  • Adding biryani spice instead of coriander powder and garam masala will enhance the flavour.
  • You can any kind of your favourite vegetables.

Ingredients
  • 200 grams Pasta
  • 2 tsp Oil
  • 1 Onion
  • 1 Tomato
  • 1 tsp Ginger garlic paste
  • Few Coriander leaves
  • Few Mint leaves
  • 1/2 tsp Coriander powder
  • 1/2 tsp Chilli powder
  • 1/2 tsp Garam masala powder
  • Salt as needed
  • 1 cup Mixed vegetables
Instructions
  1. Boil water in a bowl, add ½ tsp of oil and needed salt, add pasta and cook for 8 - 10 minutes. (or follow instructions in the pack).

  2. When done, drain the water, rinse the pasta in cold water and set it aside.

  3. Heat oil in a pan, add chopped onion, cook till it becomes translucent.

  4. Add the ginger and garlic paste, saute till raw smell leaves.

  5. Add the chopped mint leaves and coriander leaves.

  6. Add pureed tomato, cook for a few minutes.

  7. Add chilli powder, garam masala powder, coriander powder, and salt. Mix everything well.

  8. Add a little water, cook for a few minutes.

  9. Add vegetables to the mixture, add water, cover and cook for 3-5 minutes.

  10. Add cooked pasta, mix well and cook for 2 to 3 minutes.

  11. Serve hot.

10. Add a little water, cook for a few minutes.

11. Add vegetables to the mixture, and add water.

12. Cover and cook for 3-5 minutes.
