Veg Noodles | Veg Rice Noodles | How to make spicy rice noodles

Veg Noodles are a quick, easy and tasty dish that can be made healthier if you use whole grain or rice noodles with your favourite vegetables. I have used capsicum, carrot and spring onion, besides you can use red onion, shallots, peas, bean sprouts and broccoli. You can replace rice noodles with wheat noodles or hakka noodles.

How to cook noodles?

Wheat Noodles

Rice Noodles

 1. Boil plenty of water, add noodles/spaghetti (Do not Break) into boiling water and stir occasionally.

2. Cook for 3-5 minutes or cook till the noodles become chewy.

3.  Once done, drain and run under cold water.

1. Rice noodles are fragile and delicate. Handle gently.

2. Bring water to boil in a pan and turn off the flame, add rice noodles. Make sure noodles are submerged.

3. Stir occasionally, wait for 8-10 minutes.

4. When they become tender, drain and run under cold water.

5. Toss with little oil to keep the noodles from sticking.

Ingredients
  • 150 grams Noodles
  • 2 tsp Oil
  • 1 cup Spring onion
  • 2 Capsicum
  • 1 Carrot
  • 1 tsp White pepper
  • 1 tsp Soy sauce
  • 1 tsp Tomato sauce
  • Salt as needed
Instructions
  1. Cook noodles as per the instructions and keep them aside. 

  2. Heat oil in a pan, add spring onions and saute for a minute.

  3. Add sliced vegetables and cook on high flame for 2 minutes.

  4. Add soy sauce, tomato sauce, white pepper and salt and cook for a few minutes.

  5. Add cooked noodles, mix everything well and turn off the flame.

  6. Garnish with chopped spring onion and serve hot.
