Pav Bhaji is a Mumbai based street food that became popular all over India. It is thick vegetable curry served along with soft buns. Pav is the bun and bhaji is the vegetable curry. It is easy to make pav bhaji at home. Potato is the base for the masala and you can add any kind of vegetables along with potatoes. This recipe is made right from scratch, It doesn’t require store-bought pav bhaji masala powder.

There are so many variations in pav bhaji, paneer pav bhaji is the most popular one next to regular pav bhaji and the mushroom, cheese, white pav bhaji are the other variations. Pav bhaji is a healthy dish, prepared with lots of vegetables and butter.

Notes

  • While preparing pav bhaji you can add any of your favourite vegetables like cauliflower, capsicum, beetroots, etc.
  • Add a generous amount of butter for the delicious pav bhaji.
  • It is recommended to use the pressure cooker for the best results.
  • Adding orange food colour is optional.

Ingredients
  • 10 tsp Butter
  • 3 Tomatoes
  • 2 Carrots
  • 10 French beans
  • 1/2 cup Green peas
  • 2 Potatoes
  • Salt as needed
  • 1 Onion
  • 1 tsp Ginger garlic paste
  • 1/2 tsp Turmeric powder
  • 1 tsp Cumin powder
  • Few Coriander leaves
  • 1 tsp Chili powder
  • 1 pinch Orange food colour optional
  • 6 Pav buns
  • 1/2 Lemon
Instructions
  1. In a pressure cooker heat 2 tsp of butter.

  2. Add 3 chopped tomatoes, 2 chopped carrots, 10 chopped french beans.

  3. Add 1/2 cup green peas, 2 chopped potatoes, and needed salt, and add required water to cook vegetables.

  4. Cook covered for 20-25 minutes or pressure cook for 3 - 4 whistles.

  5. Once done, mash the vegetables until it becomes nice and soft.

  6. Heat 4 tsp of butter in a pan and add finely chopped onions, saute till it becomes translucent.

  7. Add ginger garlic paste cook until the raw smell goes off.

  8. Then add 1/2 tsp turmeric powder, 1 tsp cumin powder, and some chopped coriander leaves, mix everything well.

  9. Now add the required salt and 1 tsp of chilli powder.

  10. Cook until the raw smell leaves.

  11. Add cooked and mashed vegetables.

  12. Add 1 pinch of food colour (mixed with 1/4 cup of water).

  13. Add finely chopped coriander leaves and cook covered for 2 - 3 minutes.

  14. Finally, add 1 more tsp of butter and turn the flame off.

  15. Heat 2 tsp butter in a pan, slit the pav bun in the centre.

  16. Toast in the butter on both sides for a minute.

  17. Serve pav bhaji with onion and lemon slices.

Method
