Peanut Sundal/Verkadalai Sundal

Peanut Sundal/Verkadalai Sundal is a tasty, healthy, easy evening snack. There are varieties of sundal like kondakadalai sundal, karamani sundal, rajma/kidney bean sundal, green moong dal sundal etc., Peanut sundal is a quick snack, except the soaking time, it takes very less time and effort to make. I have added mango, carrot, onion with the sundal, you can also add cucumber, beetroot, curry leaves or any other vegetables of your choice.

You can also try Rajma Sundal, Chickpeas Sundal, Stuffed Mirchi Bajji, Kurkuri Bindi, Butter Murukku, Thattu vada Set, Sweet Pniyaram, Thayir Vada, Vegetable Cutlet, Masala Vada, Medu Vada, Gobi Fry, Broccoli Fry, Gobi Manchurian.

Ingredients
  • 1 cup Raw peanuts
  • Salt as needed
  • 1 Carrot
  • 1/2 Mango
  • 1 small Onion
  • Few Coriander leaves
  • 1/2 tsp Chat masala
Instructions
  1. Soak raw peanuts for 2 hours, or at least 1 hour.

  2. Once done, add peanuts in the pressure cooker, add 1/2 tsp of salt and cook for 3-4 whistles.

  3. After the pressure released, drain excess water.

  4. Add it in a bowl.

  5. Add julienned carrot and mango. Add chopped coriander leaves and onion. 

  6. Sprinkle the chat masala, mix well and the peanut sundal is ready to serve.

Method

1. Soak raw peanuts for 2 hours, or at least 1 hour.

2. Once done, add peanuts in the pressure cooker, add 1/2 tsp of salt and cook for 3-4 whistles.

3. After the pressure released, drain excess water.

4. Add it in a bowl.

5. Add julienned carrot and mango. Add chopped coriander leaves and onion.

6. Sprinkle the chat masala, mix well and the peanut sundal is ready to serve.
