Vegetable Idli | how to make vegetable idli | Healthy breakfast

Vegetable Idli is a healthy and yummy dish perfect for kids lunch box. It is easy and less time consuming,  you can prepare this with any of your favourite veggies. There are different ways to make vegetable idli, you can directly add the mixed masala in the idli batter or you can stuff them in idli.  I added carrot and potato, you can also use other vegetables like French beans, capsicum, peas, etc., pair this vegetable idli with coconut chutney, onion chutney or sambar.

Ingredients
  • 1 Carrot (chopped)
  • 1 Potato (chopped)
  • 1 Onion (chopped)
  • Few Coriander leaves
  • 2 cups Idli batter
  • 1 tsp Chili powder
  • 1/4 tsp Turmeric powder
  • 2 tsp Oil
  • Salt as needed
Instructions
  1. Heat oil in a pan, add the chopped onions and cook till it becomes translucent.

  2. Add the chopped carrot, potato, coriander leaves and sauté for a minute.

  3. Now add the salt, chilli powder, and turmeric powder.

  4. Add a little water, and cook covered for 5 minutes or till the water is absorbed.

  5. Mix the vegetable mixture with the idli batter and make idlis.

  6. Let it steam for 15 minutes.

  7. Serve hot with chutney or sambar.
