Cauliflower Bites is a tasty, crunchy snack prepared with cauliflower, potatoes, and rice flour. It is a crispy evening snack, best to serve along with coffee or tea. It is a healthy and filling snack, yummy finger food, perfect for a kid’s lunch box or snack box. You can make it just in 20 minutes. It is entirely different from traditional bonda or cutlet. Cauliflower bites go well with coconut chutney, tomato chutney, or tomato ketchup.

  • While preparing cauliflower bites, apart from cauliflower and potatoes you can any other vegetable, which is cooked and mashed well.
  • You can skip cauliflower and use only potatoes, and the remaining ingredients are the same to make potato bites.
  • You can add chopped green chilis and curry leaves to make it flavourful and a little spicy.
  • You can skip onion, fennel seeds, and coriander leaves on behalf you can add chopped ginger and garlic and some chilli flakes, to make it more aromatic and have a Chinese touch.
  • Fry on medium heat oil, if the oil is too hot bites may become burnt or if the oil is less heat, bites may not be cooked inside.
  • If the dough becomes loose add some rice flour, do not add maida or cornflour.

Ingredients
  • 150 grams Cauliflower (cut into small florets)
  • 1/2 cup Rice flour
  • 2 Potatoes
  • 1/2 Onion
  • Few Chopped coriander leaves
  • 1/2 tsp Fennel seeds
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Chili powder
  • 1 tsp Cornflour
  • Salt as needed
  • Oil for frying
Instructions
  1. In a pan boil 2 cups of water, boil on a medium flame for 5 minutes.

  2. Add 150 grams of cauliflower florets and add 1/2 tsp salt.

  3. Mix well and bring it to boil for 5 - 7 minutes.

  4. Once done, drain water and keep it aside.

  5. Boil 2 medium size potatoes, peel, shred nicely and keep it aside.

  6. In a pan boil 1/2 cup water.

  7. Add 1/2 cup rice flour and stir on a medium flame for 1 - 2 minutes.

  8. Once the rice flour becomes soft and lump dough, keep it in a large pan.

  9. Add potatoes, and cooked cauliflower.

  10. Add required salt, chopped onion, chopped coriander leaves, and 1/2 tsp fennel seeds.

  11. Add 1/4 tsp turmeric powder, 1/2 tsp chilli powder, and 1 tsp cornflour.

  12. Mix everything well and make a smooth dough.

  13. Roll it into a small cylinder shape and cut it into small pieces.

  14. Fry in hot oil, for 2 - 3 minutes or until golden brown.

  15. Drain and serve hot.
