Broken wheat kesari is a delicious dessert made of cracked wheat. which is made with wheat, jaggery, cardamom powder, cashew nuts and ghee. Cracked wheat is usually used to prepare upma, apart from that broken wheat payasam and kesari are delicious dishes. Broken wheat kesari is suitable to treat guests, to enjoy during the holidays and as an offering to the Lord. You can make wheat kesari as quickly as sooji kesari. Above all, you can make a healthy dessert that can be made with jaggery without adding sugar.
Some tips to make delicious cracked wheat kesari
- To prepare kesari, use nicely cracked wheat and if it is plump break it nicely in the mixer.
- I have added 2 cups of jaggery for 1 cup of cracked wheat, you can adjust according to your taste.
- You can cook the wheat in a pressure cooker, add the same amount of water and cook for 3 whistles.
- Adding a pinch of salt will enhance the taste.
- Kesari colour can be added if desired.
- You can add roasted raisins with cashews.
- Ghee can be added as desired.

Dessert with broken wheat
- Broken wheat - 1 cup - 200g
- Ghee - 4 tablespoons
- Jaggery - 2 cups - 500g
- Salt - 1 pinch
- Cardamom powder - ½ tsp
- Roasted cashew nuts - 10 - 15

In a pan heat 1 tsp of ghee, and add 1 cup cracked wheat.

Fry on medium heat for 3 - 4 minutes or until fragrant.

Add 3 cups of water to a pot and bring to a boil.

Once done, add to the roasted wheat.

Stir well then cover and simmer over medium heat, stirring occasionally.

Add 2 cups of jaggery to a bowl, add a little water and bring to a boil.

When the syrup is ready, set it aside.

Cook the cracked wheat gently until fluffy then add the prepared jaggery syrup and stir well for 2-3 minutes.

Add 3 tsp of ghee.

Stir in kesari until thickens.

Then add a pinch of salt and mix.

Add 1/2 tsp of cardamom powder.

Add 10 - 15 ghee-roasted cashew nuts and stir, turn off the stove after a minute.
