Bengali Sweet Pudding (Bhapa Doi) This is a delicious dessert that originated from West Bengal. It is very easy to make and does not require ghee, eggs, etc. All three things essentially needed are, thick yoghurt, condensed milk, and milk to make this delicious pudding. It is the most popular dessert in the Northern parts of India.

Notes

  • Use thick yoghurt, you can use either homemade or store-bought.
  • Use fresh curd, do not use sour curd to make this pudding.
  • I used chopped almonds and a little bit of saffron to garnish the top, it is optional.
  • Yoghurt and condensed milk are added in equal proportions and you can add condensed milk as per your wish.

Ingredients

  • 1 cup thick yoghurt
  • 1 cup condensed milk
  • 1/4 cup milk

To Garnish

  • Chopped Almonds
  • Saffron

Recipe

Step by Step Pictures

1. Add a cup of thick yoghurt to a strainer or cloth.

2. Leave it for 2 hours and drain the water.

3. After 2 hours add the thick curd to a bowl.

4. Put a spoon or whisk and stir without lumps.

5. Now add a cup of condensed milk.

6. Mix yogurt and condensed milk until it becomes creamy. Now add a quarter cup of milk and mix.

7. Grease small cups.

8. Add the prepared curd mixture into it.

9. Sprinkle a few chopped almonds on it.

10. Then sprinkle a little saffron.


11. Heat water in an idli pot and place the steamer plate on it.

12. Cover the prepared cups with aluminium foil and place them on the steamer plate.

14. Cover and cook on a medium flame for 20 minutes.

15. After 20 minutes take out the pudding and place it in the fridge.

16. Serve chill after an hour.
