Sooji/Rava cake is a tasty cake prepared with Semolina/Rava/Sooji. Cakes are commonly prepared with All-purpose flour, Maida, or cake flour. Apart from that in India, people used to prepare cakes with whole wheat flour. Almond flour cake is a tasty cake made with almond flour. Basbousa is a cake prepared with semolina and eggs, which is originated in the middle east. Eggless Rava Cake is a soft & moist cake that is so simple and easy anybody can prepare it.

In India, there are many sweets prepared with Rava, Kesari is the popular one. Rava cake is a new generation dish, which tasted similar to the Rava Kesari. You can prepare it either in an oven or in a covered pan. I have prepared it with a pan. If you a making it in a pressure cooker, remove the washer, the remaining steps are the same.

Notes

  • While preparing Rava cake, you can grind the Rava and sugar in a mixer, or you can use fine Rava.
  • You can add 1/2 tsp cardamom powder instead of vanilla essence.
  • You can add chopped pistachios, or almonds along with tutti frutti.
  • You can also add raisins.
  • You can replace the melted butter, with ghee/clarified butter, it is more flavourful than butter.
  • You can replace the maida with whole wheat flour.
  • If the batter is thick, the cake may become hard, flowing consistency batter is best for a soft and moist cake.
  • If you are baking it, preheat the oven to 180 c/ 360 F and bake for 40 – 50 minutes.

Ingredients
  • 1 cup Sooji/Rava
  • 3/4 cup Sugar
  • 1/2 cup Curd
  • 1/4 Cup Melted Butter
  • 1/2 cup Milk
  • 1/4 cup Tutti Frutti
  • 1/4 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/4 cup Maida + 1 tsp
  • 1 tsp Vanilla Essence
Instructions
  1. In a mixer jar, add 1 cup of Rava and 3/4 cup of sugar.

  2. Grind it as a fine powder.

  3. In a wide bowl add 1/2 cup of thick curd and 1/4 cup of melted butter.

  4. Whisk until no lumps.

  5. Add Rava and sugar mixture and combine well.

  6. Now add 1/4 cup of milk and mix.

  7. Keep it aside for 30 minutes.

  8. In a small bowl, add 1/4 cup of tutti frutti.

  9. Add 1 tsp maida and mix well.

  10. After 30 minutes, add tutti frutti with the rava mixture.

  11. Add 1/4 tsp baking soda, 1 tsp baking powder and 1/4 cup maida.

  12. Combine everything well.

  13. Add 1/4 cup of milk and mix well.

  14. Add 1 tsp of vanilla essence and mix.

  15. Keep the batter flowing consistency.

  16. Add it to the greased pan.

  17. Heat a pan (covered) with a stand inside, on a medium flame for 10 minutes.

  18. Once done, place the cake pan.

  19. Cook covered on low flame for 50 - 60 minutes.

  20. Once done, transfer to a cooling rack, cool down completely.

  21. Cut and serve the cake.
