Notes
- If you are using tender bitter melon, use the seeds, otherwise, it is recommended to remove the seeds.
- Soak the bitter gourd in the buttermilk to reduce the bitterness.
- Squeeze the buttermilk completely, before adding the masala powders.
- Adjust the chilli powder according to your spiciness.
- You can also deep fry the bitter gourd.
- You can bake it at 180C/360F for 30 – 40 minutes.
- Adding 1/2 tsp ginger garlic paste and 1/2 tsp garam masala will enhance the taste.

- 3 Bitter gourd | Pavakkai
- 1/2 tsp Chilli powder
- 1 pinch Turmeric powder
- 1/2 tsp Coriander powder
- 1/2 tsp Rice flour
- 1 tsp Lemon juice
- 4 tsp Oil
- 1/4 cup Buttermilk
- Salt as needed

Rinse and cut the bitter gourds into thin roundels and remove the seeds.

Dissolve ½ tsp of salt in buttermilk and soak the bitter gourd pieces in it.

After 10 mins, squeeze the buttermilk completely and keep it aside.

Take the bitter gourds in a bowl, and add salt, turmeric powder, chilli powder, coriander powder, and rice flour.

Mix everything well and add lemon juice, keep it aside for 10 minutes.

Heat oil in a pan, and shallow fry the bitter gourds.

Fry till golden brown and crisp.

Once done, remove it from the oil.

Serve hot with rice.
