Instant Bonda is a quick and crunchy snack that is called in many different names according to the state and variations. Especially, it is popular in Andhra Pradesh called ‘punugulu’ in Telugu. We call it  ‘Idli Maavu Bonda’, Goli baje in Karnataka. It will not take more than 15 minutes. There are many varieties of bonda prepared in South India, everything is  For this bonda, there’s no need to grind any batter and we can use the Idli batter always available in our home. You can serve this bonda with chutney, sambar, or chilli sauce.

Notes

  • For Idli Batter Bonda, use the fresh batter and do not use 3 or 4 days old batter. It is best when it is slightly sour.
  • You can also use the batter right after grinding.
  • If the batter is too thick, add little water to adjust the consistency. Otherwise bonda ends up hard, instead of soft and crunchy.
  • If the batter is too thin, add 2 or 3 tsp of Maida. Otherwise, the bonda may observe lots of oil.
  • While adding salt, check twice as salt is already added with Idli batter.
  • Baking soda is optional.
  • Along with chopped coriander leaves, you can add chopped curry leaves too.
  • You can replace the green chillies with 1/2 tsp of chilli powder.

Crispy bonda recipe

Ingredients
  • 2 cups Idli Batter
  • 1 Onion
  • 1/4 cup Grated coconut
  • 2 Green Chilis
  • Salt as required
  • 1/4 tsp Baking Soda (Optional)
  • 2 tsp Rice Flour
  • 3 tsp Rava or sooji
  • Few chopped coriander leaves
  • Oil for frying
Instructions
  1. In a bowl, add 2 cups of Idli batter.

  2. Add 1 chopped onion.

  3. Add 1/4 cup chopped or shredded coconut.

  4. Add 2 green chillies chopped, required salt, and 1/4 tsp baking soda.

  5. Add 2 tsp rice flour and 3 tsp rava.

  6. Combine well and adjust the consistency if required.

  7. Finally, add chopped coriander leaves and mix.

  8. Now drop a small ball sized batter in hot oil.

  9. Fry on a medium flame for 2 to 3 minutes.

  10. Cook until it turns golden brown.

  11. Serve hot with chutney or sambar.
