Motichur Laddu is a very soft and mouthwatering sweet made with besan/gram flour, ghee and sugar mixed with nuts and flavoured with cardamom powder. It is one of my favourite dishes, specially made for Diwali, Ganesh Chaturthi, and it is perfect for all occasions and mostly served as a prasad. There are many different laddus like, besan, whole wheat, coconut, rava and sesame laddu. Boondi laddu is different from motichur laddu. Motichur laddu is made with tiny boondis. This type of laddu is more popular in North India than in South India. Boondi ladles are available exclusively for making this laddu, but I have mentioned a recipe that is easily made without the ladle.

Notes

  • Boondi batter should be in a dosa batter consistency, too thick or diluted batter may spoil the dish.
  • It is necessary to add baking soda, without adding baking soda the boondi will not come out pearly.
  • I added 200 grams of sugar to 100 grams of gram flour, which is the perfect amount, but you can adjust sugar to your liking.
  • When the sugar syrup is boiling, boil it till it becomes viscous and does not boil it till it becomes sticky.
  • I have added little chopped cashew nuts, but instead, you can add dried melon seeds, pistachios and almonds.

Ingredients
  • Gram flour/Besan - 1 cup - 100g
  • Sugar - 1 cup - 200g
  • Salt - 1 pinch
  • Baking soda - 1 pinch
  • Orange food colour- 1 pinch
  • Cardamom powder - ¼ tsp
  • Cashew nuts - 10
  • Ghee - as needed
  • Cooking oil - for frying
Instructions
  1. Add a cup of besan to a bowl.

  2. Add a pinch of salt to it.

  3. Then add 1 pinch of baking soda.

  4. Add a pinch of orange food colour.

  5. Once mixed then add a little water and mix like a paste without lumps.

  6. Then add the required water and mix to make dosa batter consistency.

  7. Heat oil in a pan for frying, you can use a boondi ladle or motichur ladle otherwise you can use a strainer, pour the batter and tap. You can see tiny boondis dropping in oil.

  8. It will take 20 - 30 seconds for boondis to cook. Once done, keep the boondis in the kitchen towel to observe excess oil. Repeat the same until the batter is done.

  9. Add a cup of sugar to a pan.

  10. Add ¼ tsp of cardamom powder.

  11. Add a cup of water and bring to a boil over medium heat.

  12. Bring it to a boil until it becomes viscous.

  13. Now add the prepared boondis to it.

  14. Put on medium heat and stir for 2 minutes.

  15. Then turn off the stove and cover.

  16. Stir after 20 - 30 minutes and let the boondi absorb the sugar syrup.

  17. Now add the chopped cashews.

  18. Once stirred, apply ghee in hand and roll into small balls.

  19. Delicious motichur laddu is ready to serve.
